The type of canner you choose will be based on the type of food you plan to preserve as well as your experience with and approach to the canning process. The steam canner is a large steel cooking pot with a tight fitting lid which often includes a canning rack that allows for jars to be lowered into the pot. This type of canner is often recommended for beginners for its ease of use. Steam canners are ideal for preserving fruits, tomatoes and high-acid foods.

The pressure canner is recommended for low-acid foods because it can reach the high temperatures that are required to kill bacteria and safely preserve foods such as meat, vegetables and fish. The pressure canner is a large cooking pot with a tight fitting lid that features a pressure gauge, vent and safety valve. The pressure canner may also include a canning rack. Because the correct balance of temperature and pressure needs to be obtained to safely preserve the types of foods cooked in a pressure canner, it is recommended that this type of canner is used by someone who has experience canning.
