The rest of the world calls this a heat diffuser because that's what it does. But if you search with that term you only get hair dryers. This little gadget will save many a meal by preventing burning delicate sauces, overheating chocolate and just keeping the heat evently distributed no matter what cookware you use. It's especially wonderful with Le Creuset as well as stainless, stainless-clad aluminum and glass or ceramic pots. Ace Hardware used to keep these things in stock, but at least they are still available through their online store. Get one for yourself and everyone on your gift list. New cooks will especially benefit from this low-tech method to save a meal.

for me it's ideal because I make a lot of sauces, soups, rice dishes and if I need to simmer some meats, this is my best friend! Nothing burns nor do you need a high falme!
