Wife uses it exclusively for bread kneading. Woe be to anyone who touches a knife to this board!
Surface as purchased is slightly rough for this application. Sanded it very smooth, mineral oiled it. Maintain it with ScotchBrite (as if it were a fine gauge steel wool) and mineral oil. Smooth as a baby's bottom.
Seems very dimensionally stable - no warping or cupping. Sits very flat on the counter, which is crucial in this application. Completely reverseable, no difference from one side to the other.
Good size only being .75 inches thick. A lot of cutting boards in this length and width are 1.5 inches or thicker. That adds a lot of height to the counter when you are kneading.
Great looking, too. It just looks "right" when you take it out of the cupboard and put it on the counter for use.
This has a bullnose style edge. Other Snow River boards purchased elsewhere have an indented "finger" edge. When dealing with dough, the bullnose is *much* easier to clean.
