Ingredients: 1 Recipe – Baked Cheddar Poblano Biscuits; 2 lbs – Cooked Turkey Breast; 8 Slices – Applewood Smoked Bacon; 16 Slices – Pepper jack Cheese; 16 Slices – Bread and Butter Pickles; 1 Stick – Salted Butter (room temp); 2 Tbsp – Dark Brown Sugar; 2 Tbsp – Fire Honey, 5280 Culinary; 1 Tbsp – Rub A Dub, 5280 Culinary; 1/4 Cup – Cayenne Pepper Sauce; 1 Cheddar Poblano Biscuit, Sliced in half; ¼ lb Turkey Breast, Sliced Thin; 4-6 Tbsp Nashville Hot Sauce; 1 Slice Applewood Smoked Bacon; 2 Slices Pepper Jack Cheese; 2 Slices Bread and Butter Pickles

Hot Turkey Melt

1 Recipe – Baked Cheddar Poblano Biscuits
2 lbs – Cooked Turkey Breast
8 Slices – Applewood Smoked Bacon
16 Slices – Pepper jack Cheese
16 Slices – Bread and Butter Pickles

Nashville Hot Sauce

1 Stick – Salted Butter (room temp)
2 Tbsp – Dark Brown Sugar
2 Tbsp – Fire Honey, 5280 Culinary
1 Tbsp – Rub A Dub, 5280 Culinary
1/4 Cup – Cayenne Pepper Sauce

Build Instructions

1 Cheddar Poblano Biscuit, Sliced in half
¼ lb Turkey Breast, Sliced Thin
4-6 Tbsp Nashville Hot Sauce
1 Slice Applewood Smoked Bacon
2 Slices Pepper Jack Cheese
2 Slices Bread and Butter Pickles

Cooking Directions

Load pellet hopper with Reserve Blend Pellets, ignite Traeger and set temp to 400˚
Add All sauce ingredients into a small sauce pan
Heat Nashville Hot sauce until the butter is just melted, stir well and remove from the stove
Using a cookie sheet or cast iron skillet(s), arrange melts as follows
1. Biscuit, sliced in half
2. Brush biscuit with Nashville Hot Sauce
3. Sliced Turkey (warmed and brushed with Nashville hot sauce)
4. Cooked bacon
5. Pepper jack cheese
Place the cast iron pan into the Traeger
Bake the melts until cheese is melted and biscuits are toasted, approx. 15-20 minutes
Carefully remove the cast iron pan using heat proof gloves
Allow to cool for 3-5 minutes
Top with bread and butter pickle chips, serve with extra Nashville hot sauce

Chef’s Tip – serve with jalapeno jelly for an extra kick
