Ingredients

  • 4 ea: Peppers, Orange, Large (Carved like a pumpkin)
  • 1 lb: Pasta, Penne (Cooked and chilled)
  • 2 cup: Cheese Sauce (In jar in pasta aisle)
  • 1 cup: Alfredo Sauce (In jar in pasta aisle)
  • 1 cup: Cheese, Blend, Mac and Cheese (Your choice of brand)
  • Taste: Oink Rub, 5280 Culinary (As needed for crusting flavor)

Preparation Directions

  1. Follow all prep instructions in the ingredient list
  2. Pre-Cook pasta or use pasta ready type products from the grocery store
  3. Wash all tools prior to use
  4. Clean and sanitize all cutting boards and prep surfaces prior to use
  5. Read all manufacturer’s instructions before using grills, starters and any cooking tools
  6. Heat Weber grill to 550˚ F
  7. Wash and cut peppers like you would a pumpkin, cut off the top, scoop out the seed and carve out the face.  Chef’s Tip:  If pepper rolls around on bottom, make a flat spot to hold it stable
  8. Make your favorite Mac and Cheese recipe or use ours above
  9. While mac is still warm, stuff peppers and place the top back on
  10. Place peppers onto a roasting rack or cooking sheet pan
  11. Close grill and cook MAC-O-LANTERNS for 8-10 minutes or until gooey and bubbly
  12. Using tongs and heat proof gloves, remove pan from the grill and bring into the kitchen.  Allow to rest for 2-3 minutes and devour.
